There are times when we want some home cooking that’s wholesome, delicious but super easy. At times like these, this is a recipe for you. It’s one dish and contains lots of seasonal vegetables that’s super good for you too.

Total time:40 minutes

Serves: 4

Ingredients

800g pack chicken thighs, skinned
1 red onion, cut into chunks
1 courgette, halved and cut into thick slices
500g sweet potatoes, peeled and cut into chunks
25g walnut pieces, roughly chopped
1 tbsp Cajun seasoning
1 tbsp olive oil
2 tbsp Rowse Honey

Method

  1. Preheat the oven to 200ºC, gas mark 6. Place the chicken, vegetables and walnuts in a large roasting tin.
  2. Mix the Cajun seasoning, oil and honey together and season, then drizzle over the chicken and vegetables.
  3. Roast for 30 minutes until the vegetables are tender and the chicken is cooked through with no pink meat. Divide between plates and serve with your favourite green veg.

Cook’s tip
Vary the vegetables in this lovely dish to suit your tastes. Try it with Charlotte potatoes, Chantenay carrots, peppers or butternut squash.
