This easy rogan josh recipe will see you well; simple to do, easy to make in large batches and it’s sure to be a hit with everyone. Don’t forget to add naam breads to the shopping list.

Serves: 6- prepping for more? Just divide the quantities by 6 and multiply by however many you’re preparing for.
1 tbsp sunflower oil
1 large red onion, finely chopped
6 cloves garlic, finely chopped
1 tsp cumin seeds
400g dried red lentils
2-3 tbsp Cooks’ Ingredients Rogan Josh Curry Paste
1.5 litres chicken stock, hot
6 free-range skinless chicken thigh fillets, cubed
235g pack Waitrose Ready Washed Spinach
Cooked basmati rice and natural yogurt, to serve
- Heat the oil in a large pan and cook the onion, garlic and cumin seeds for 5 minutes until softened and golden. Add the lentils and curry paste and stir for 1 minute, then add the chicken stock and bring everything to a simmer.
- Stir in the chicken and cook gently for 25 minutes until the lentils are tender and the chicken is cooked through with no pink meat.
- Add the spinach and cook for 1-2 minutes until just wilted.
- Serve with cooked basmati rice and spoonfuls of yogurt.
Try adding some grated cucumber and a squeeze of lemon juice to the yogurt for a cooling raita.
