For our fruit of the month we look to the super powerful raspberry. As with most berries, the raspberry is a super antioxidant which aids in the prevention of cancer- a reason alone to incorporate this amazing fruit into our daily diets. But it is also an excellent source of fibre and water ensuring healthier digestive function as well as an excellent source of vitamin C (100g of berries accounts for 44% of our daily required intake) which supports our immune system, Vitamin K (which aids the body’s function to clot our blood when we’re hurt) and Vitamin E (the vitamin which protects cells from damage- a very powerful antioxidant alongside vitamin C). It is also a most excellent source of manganese which helps the body form tissues and bone and aids in fat and carbohydrate metabolism as well as calcium absorption. So whether incorporating the raspberry into a super berry medley or some other delicious recipe, there is plenty of reason to increase your intake of this incredible fruit.
To kick of the month, we thought we’d share this twist on a very classic British dessert.
Ingredients:
300ml pot essential Waitrose Double Cream
2 tbsp icing sugar
3 x 45g Gü Chocolate Ganache Mini Puds
300g raspberries, thawed if frozen
1 tub 16 mini meringue shells, broken into quarters
Method:
- Whip the cream and icing sugar together until it forms firm peaks.
- Stir the pots of ganache to soften the mixture slightly, then stir into the cream with the raspberries and meringues. Spoon into a large bowl and serve swiftly.
