A delightful, Autumnal dessert. To make it extra comforting, add a couple of pinches of cinnamon to step 2- you’ll not regret it!
4 ripe peaches, halved and stoned
Grated zest of ½ orange
50g butter, softened
50g caster sugar
1 Waitrose Columbian Blacktail Medium Free Range Egg, beaten
50g ground almonds
About 1 tbsp flaked almonds to scatter
2 tbsp amaretto liqueur or orange juice
- Preheat the oven to 190ºC, gas mark 5. Arrange the peach halves snugly in a baking dish, cut-side up.
- Cream the orange zest with the butter and sugar until pale, then beat in the egg. Stir in the ground almonds. Spoon into the centre of the peaches, scatter with flaked almonds and pour over the amaretto, or orange juice.
- Bake for 20 –25 minutes until the peaches are soft and the topping is golden. Serve hot or cold with vanilla ice cream or crème fraîche.
