Recipe: Easy Chicken Rogan Josh with Red Lentils

If you were planning on having friends/the family over for a bank holiday BBQ, don’t let the threat of bad weather ruin your intentions. Arm yourself with a backup option, just in case. This easy rogan josh recipe will see you well; simple to do, easy to make in large batches and it’s sure to be a hit with everyone. Don’t forget to add naam breads to the shopping list.

Rogan Josh Recipe

Preparation time:10 minutes
Cooking time:30 minutes
Total time:40 minutes

Serves: 6- prepping for more? Just divide the quantities by 6 and multiply by however many you’re preparing for.

Ingredients

1 tbsp sunflower oil
1 large red onion, finely chopped
6 cloves garlic, finely chopped
1 tsp cumin seeds
400g dried red lentils
2-3 tbsp Cooks’ Ingredients Rogan Josh Curry Paste
1.5 litres chicken stock, hot
6 free-range skinless chicken thigh fillets, cubed
235g pack Waitrose Ready Washed Spinach
Cooked basmati rice and natural yogurt, to serve

Method

  1. Heat the oil in a large pan and cook the onion, garlic and cumin seeds for 5 minutes until softened and golden. Add the lentils and curry paste and stir for 1 minute, then add the chicken stock and bring everything to a simmer.
  2. Stir in the chicken and cook gently for 25 minutes until the lentils are tender and the chicken is cooked through with no pink meat.
  3. Add the spinach and cook for 1-2 minutes until just wilted.
  4. Serve with cooked basmati rice and spoonfuls of yogurt.

Cook’s tip
Try adding some grated cucumber and a squeeze of lemon juice to the yogurt for a cooling raita.
