Marmalade-glazed Sausages with Spicy Sweet Potato Wedges

If you’re looking for a bit of comfort food- this is what you want. A one pan, easy to do, tasty recipe.

Ingredients:
1 tbsp tomato ketchup
2 tbsp fine-cut orange marmalade
2 tbsp sunflower oil
454g pack of 8 Waitrose Half Fat Extra Lean Premium
Pork Sausages
500g essential Waitrose Sweet Potatoes, scrubbed
½ tsp chilli powder
¼ tsp ground ginger
1 tsp ground coriander

Method:

1 Preheat the oven to 200ºC, gas mark 6. To make the glaze for the sausages mix together the ketchup, marmalade and half the oil. Brush over the sausages and leave to stand while you prepare the potatoes.

2 Cut the sweet potatoes into thick even-sized wedges about 5cm long and toss into a roasting tin with a tablespoon of the oil. For the seasoning, combine the chilli powder, ginger and coriander in a large bowl. Add the seasoning to the potatoes and toss to coat. Cook in the oven for 15 minutes. Remove from the oven, turn the wedges over and tuck the sausages between.

3 Bake the sausages and potatoes in the oven for 25–30 minutes until slightly coloured and cooked through. Serve with green vegetables such as broccoli tender stalk and shredded cabbage.
