Recipe: Baked Salmon With Thyme & Lemon Oat Crust

For our final broccoli recipe, we thought we’d share this super dinner! Salmon is one of my favourite mains to accompany broccoli- like broccoli, salmon is high in vitamins and nutrients so you’ll be getting a double helping of goodness but salmon is inherently known for the omega-3 fatty acids which is excellent for heart health, mood, skin, hair and nails!

Baked Salmon With Thyme & Lemon Oat Crust

Ingredients:

500g Scottish salmon fillet
50g Quaker Oats
Grated zest of ½ lemon
1 tbsp chopped fresh thyme
25g Waitrose LOVE Life Seed & Sun Dried Tomato Topper
1 egg, beaten
1 tbsp sunflower oil

Method:

  1. Preheat the oven to 200ºC, gas mark 6. Using a sharp knife, carefully remove the skin from the salmon (or ask the fish counter to do this for you). Mix together the Quaker Oats, lemon zest, thyme, seed topper and seasoning. Add the egg and mix well.
  2. Place the salmon on an oiled baking sheet, skinned side up. Brush with a little of the oil then pat on the oat crust to cover the skinned side of the salmon. Drizzle with any remaining oil. Bake in the oven for 25 minutes, until the salmon is cooked through and the crust is crisp and golden. Serve sliced, with new potatoes and steamed broccoli
